One of my favorite baked goods is banana bread. Everyone knows when the bananas that have been sitting in the fruit bowl for over a week start going brown, they instantly get thrown into a banana bread mix. What I have loved doing to help budget is buying a box mix of banana bread and then adding extra ingredients into the mix to enchase the flavor. This way, I still get the flavor of a mix from “scratch” but on a college student-friendly budget. To make these muffins a bit healthier, I added some chocolate protein into the mix and a few other things to make them extra yummy.
Ingredients:
2-3 brown bananas
I scoop of your protein of choice (I used Astroflav Vegan Chocolate Mix)
1 box Simple Mills Almond Flour Banana Bread Muffin Mix
3 eggs
1/2 cup milk of choice (I used Chobani Vanilla Oatmilk)
1/3 cup oil
Dash of cinnamon (optional)
Dash of vanilla extract (optional)
Instructions:
1. Start by preheating the oven to 350°F so it can preheat while we prepare the rest of the ingredients.
2. Add the brown bananas into a bowl and mush them down with a fork until they are fully mushed, then add in the eggs, milk, vanilla, and oil; whisk well until they are fully blended together.
3. Add the box mix, protein, and cinnamon into the wet mixture and; whisk well until fully blended.
4. Spoon the batter into the muffin tins so they are 3/4 of the way filled.
5. Place the muffins into the oven for 15-20 minutes or until the center of the muffins is fully cooked. Let cool before eating to prevent sticking.
6. Enjoy!
These muffins made the whole apartment smell so yummy. The mushed bananas added a nice moistness to the muffins, and the protein added a nice hint of chocolate flavor as well. Try out this recipe today, and let me know what you think!
